鱼明胶与陆地哺乳动物明胶相比,具有较低的胶凝及熔化温度。鱼皮明胶形成的凝胶能在人类的体温下熔化,而熔化时又具有高聚物特殊的口感,这在其他生物高聚体中是很少见的。然而由于鱼皮的种类繁多,不同种类的鱼所制得的凝胶也各不相同,如从热带鱼黄鳍、金枪鱼和鳕鱼皮中提取的明胶的凝胶强度较高,从罗非鱼、罗鱼中提取的明胶凝胶强度较低。
